I use my Snap-on but no way to adjust the torque on it (I don't believe).
Is there an air ratchet that works similar to a torque wrench?

I have the FAR72C by Snap-On Ratchet, Air, Super Duty, 3/8" Drive (5-65 ft. lb.)
but how on earth do you adjust the torque settings??

The only way i can think to semi control torque would to lower your operating air pressure but it wouldn't be accurate. What are you working on that you would need something like that?

I work on a lot of transmissions and transmission pans. Lots of bolts around the 8-25 ft lbs.

The small"Blue Point" butterfly gun is great for tranny pans. I keep it on the lowest setting . Its a discontinued product but they usually have some rebuilt ones available. I bought 3 of them just in case they become unavailable. The FAR72 is way too much for pans. Home Depot sells a "Husky" butterfly gun that is decent. For valve bodies i use an electric quarter inch gun.

there is a VERY expensive air tool.. shaped like an air ratchet.. but it does not ratchet.. it spins through a 45 degree gear set.. it has the ability to limit torque.. it has a clutch that slips when it reaches preset.. i bought one for 20 bucks from boeing surplus up in kent washington.. but it was completely worn out..
i seem to recall they are made by Cleco
check in the assembly tools... do so sitting down.. make sure there is a study back on your chair..

you can probably get them through grainger... or mcmaster
you will need a torque wrench tester to go with it to verify the adjustment.. they can be had from mcmaster also... they are a brick that bolts to the wall with a dial indicator.. and a square drive to stick your torque wrench into to see how far the needle moves ... price around..

The only thing on a transmission that requires precise torque is a valve body and that is almost always inch pounds. Nobody torques pan gaskets you just can't use a gun thats got enough power to crush gaskets and strip bolt holes.
