I have a 2000 Jeep Grand Cherokee. I have always had oil pressure about 40psi. I had an oil change on Tuesday and now the gauge is just about maxing out. Any ideas ? Safe to drive until I can get it back to mechanic?

May be coincidental but normally the oil sending unit does this when it's bad, if it reads at the top then it's a good place to start, fairly cheap.
The only other thing, being you just had the oil changed done, would be the wrong oil filter, if there's too much restriction in the filter due to the wrong application it'll drive up the pressure.
