This has been developping over time:It is hard to shift into any gear but easy to shift out of any gear when the truck is standing still, no matter if cold or warmed up. But while the truck is rolling at any speed, in any gear or neutral, it is easy to shift into or out of any gear. It can't be the oil. What could cause this?

sounds like the hydraulic clutch master cylinder or clutch slave cylinder is not applying the full stroke the pedal is trying to produce...

try having the clutch system pressure bleed...... not just pumped up with a foot...
you did check the fluid level??? see image ...
