Is it possible? I don't want a truck anymore, but I have to trailer my horse (bumper pull, obviously) almost every weekend... so can I find SOMETHING that gets decent gas mileage (at least when it isn't pulling the trailer)? Any suggestions?

I'd point you in the direction of the Kia Borrego. The V6 can tow 5000lbs and the optional V8 will get you to 7500lbs of towing capacity. Both engines manage a respectable 21 mpg highway- here are the spec sheets- http://www.kia.com/borrego/borrego-specs.php
